A blend of 65% Syrah, 20% Mourvèdre, and 15% Grenache, this organic wine is aged for 14 months in large oak vats and ovoid concrete tanks. It displays a rich ruby color with notes of violet, iris, and earthy terroir. On the palate, it combines the bitterness of rosemary and thyme with flavors of wild fruits like blackberries, cassis, and strawberries, balanced by firm yet delicate structure.

Food Pairings: Ideal with Mediterranean dishes like rosemary rabbit, duck with olives, or grilled tuna belly, as well as heartier dishes like steak au poivre and blood sausage.
